Choriqueso is a classic warm Mexican cheese dip topped with chorizo. Add a touch of cilantro for an extra kick, and serve with your favorite chip or warmed tortillas. Whether you enjoy choriqueso as an appetizer or a topping for your main course, this recipe is sure to satisfy.
Ingredients
- 1 cup Mexican chorizo, casing removed and crumbled
- ¼ white onion, diced
- 1 chopped garlic clove
- 1 diced jalapeno
- ½ teaspoon kosher salt
- 1 cup cubed Monterey Jack cheese
- 1 ½ cup cubed Oaxaca cheese
- Warm flour tortillas or tortilla chips
Instructions
- In a cast-iron skillet or a non-stick pan over medium heat, brown the chorizo until cooked through. With a slotted spoon, remove the chorizo, leaving 2 tablespoons of oil in the skillet, and place on a towel-lined plate.
- In the same skillet, cook jalapeno, onion, and garlic on low heat. Season with salt, stirring occasionally until carmelized, about 6 minutes.
- Turn off the heat and mix the chorizo with the vegetables. Remove half of the mixture and set it aside.
- Add the cheeses on top of the remaining mixture in the skillet. Sprinkle the second half of the chorizo mixture over the cheese.
- Bake for 12-15 minutes at 350 degrees or until completely melted. Serve and enjoy hot!

When it comes to choriqueso, the possibilities are endless. The recipe can be adjusted for stovetop only, ingredients adjusted to increase or decrease the heat – add some pico de gallo, garnish with freshly chopped cilantro, and so on.
